Margaret River Cabernet Sauvignon 2010

Vineyard
Produced from two vineyards in the Margaret River wine region, the majority of this wine hails from a certified organic grower in the Rosa Glen area just south of Margaret River. A smaller portion was sourced from the classic gravelly soils of the Wilyabrup region in central Margaret River. We intentionally combined both these vineyards with the aim of capturing the ripe blackberry and blueberry flavours noted from these regions.

Harvest
2010 was an ideal summer for red fruit ripening. Fruit was hand harvested in April and although quite geographically separate, the vineyards were harvested within days of each other.

Winemaking
All components of the final blend were kept separate until just before bottling. The Rosa Glen fruit was cooled overnight before de-stemming and crushing. Fermentation began cool in 7 tonne static fermenters at a relatively moderate 24 degrees celcius over an 8 day period.  Regular pump-overs took place 3 – 4 times a day regulating temperatures and extracting tannin flavour and colour.  Following pressing and malolactic fermentation, the wine was transferred to 100 per cent French oak for eight months.  The Wilyabrup component was fermented in small open-top fermenters, hand-plunged and fermented to near dryness from where it was gently basket pressed to maximise the extraction of soft tannins. From there the wine was transferred directly from the press to new French oak hogs heads. To add further complexity, a small portion of merlot and cabernet franc were blended prior to bottling.

Nose
Hints of mint and dusty oak. Beautiful cigar-box characters will develop over time.

Palate
A stylish medium-bodied cabernet sauvignon with a medley of back forest fruits, olives and violet characters. A classic Margaret River style.

Food
A softer style cabernet ideally suited to slow-cooked Osso Buco or hard savoury cheeses such as parmesan or aged cheddar.

Cellaring
Showing excellent varietal cabernet flavour now, this wine will develop further softness in the medium-term (3-4 years).
